Pinais Na Dilis

Pinais Na Dilis is one of the oldest delicacy that very easy to cook, with affordable ingredients but tasty and delicious. I used sinigang mix powder in this recipe because fresh sampaloc is not available nor kamias here in my place. But I was surprised to the outcome of instant pampaasim, it is really tasty. It is indeed tastier if you will squeeze calamansi  on top of it then add some chilies. Well, once you added chilies, you may say perfect! because this is the great partner of pinais for hot steamed rice.











Ingredients:


1/2 kg.         Dilis (Anchovy)
1 1/2 tsp.     Salt
1 tsp.           Ground Black Pepper
1 pc.            Medium Onion (chopped)
1 tbsp.         Ginger (chopped)
1 pc.            Medium Tomato (cut into strips)
1 tbsp.         Sinigang Mix Powder
1/2 cup        Water


Cooking Procedure:


Step 1
In a bowl, combine dilis, salt, pepper, onion, ginger, and tomato. Mix well until all ingredients are incorporated. Then, set aside for 10 minutes to absorb all ingredients.

Step 2
Meanwhile, prepare banana wrapper by passing over flames to strengthen it and not easily to tear.

Place the dilis onto the crossed banana leaves wrapper then fold both ends tightly to avoid dismantling the fish during cooking. You can tie it to secure it more.

Step 4
In a pan or pot, pour 1/2 cup of water and sinigang mix. Dissolve it by stirring until granules are less visible. Then place the sets of wrapped dilis on the pan.

Step 5
Simmer it for 25 to 30 minutes over low heat. Do not turn the flame higher, keep in low since the duration of simmering is quite enough to cook your dilis. Otherwise it will break your fish and dismantled.

Step 6
Serve while hot, better to add chilies and calamansi according to your taste. In this recipe, I made 3 sets of wrapped dilis, good for 6 persons since I used big size of dilis.
