Suman Malagkit is one of the favorites or you can say one of the best snacks to eat and usually eating during breakfast with coffee. You can simply dip it in white sugar then drink a cup of coffee and guess what, it would complete your day because you will instantly remember what you were eating during old days. Because suman malagkit is always there in every holidays specially Christmas and new year. Suman sa malagkit is merely perfect if you have Matamis Na Bao sauce. You can buy coconut caramel in grocery if you do not have time to make matamis na bao. But of course making your own caramel sauce is more natural when it comes with its taste. Some way of making matamis na bao is using brown sugar instead of Sangkaka or panocha, due to unavailability of it. For me, suman sa malagkit is my favorite because of the authenticity and taste. I used to cook with my mom during my childhood and I can say because of suman sa malagkit, I always remember the memories with my family gathering during important occasions specially Christmas.
Ingredients for Suman Malagkit:
3 cups Glutinous Rice
3 cups Coconut Milk
1 1/2 tsp Salt
1/4 cup Sugar
Banana Leaves
Ingredients for Matamis Na Bao:
2 cups Coconut Milk
1 cup Sangkaka or Brown Sugar
1/4 tsp. Salt
Cooking Procedure:
Step 1
In a bowl, soak glutinous rice for 3 hours. Then prepare a big bowl to squeeze the coconut milk.
Pour 5 cups shredded coconut and 3 cups of warm water. It can produce 5 cups of coconut
milk which is enough to make Suman Malagkit and for Matamis Na Bao.
Step 2
In a wok pan, pour 3 cups of coconut milk then add 1/4 tsp. of salt over low heat. Stir it to dissolve salt and let it boil. Once it is boiled, pour 3 cups of soaked glutinous rice and constantly stir until liquid is completely absorbed. It will take 10 to 12 minutes of stirring. Remove the pan and set aside for 10 to 15 minutes once it is done.
Step 3
Meanwhile, prepare banana leaves for wrapping by passing it over the flames. You should do this process to strengthen the leaves so that it would not tear easily. Cut it by 10 by 6 inches or 10 by 10 inches depends the size of your Suman. Prepare as well for tie by cutting the banana ribs or kitchen twine or simply string of rice sack.
Step 4
Scope 2 tablespoonful of rice malagkit and place it on banana leaf horizontally. Place your two thumbs to lock it onto the edge of covered malagkit then roll it tightly, then fold both ends gently. Tie the Suman by facing both end of paired suman.You can watch the video down below for proper demonstration.
Step 5
In a pot, pour enough water and place the suman inside steamer then cook it for 1 hour over medium heat. You can cook it as well through boiling over low medium heat for 45 minutes. Once it is done, set it aside for cooling it down and cover it to steam it more.
In a pan over medium heat, pour 2 cups of coconut milk and add salt. Stir it then add Sangkaka. Constantly stir it until the sauce is thicken. Remove it from the pan and transfer it to a jar or container.
