Karioka is one of the favorite snacks of Filipinos. It is usually made of glutinous flour or cassava. In this video, I made Karioka using cassava. You would notice here the ingredients are very basic and very easy to prepare. That is why this is perfect for urgent snack preparation for you unexpected visitors. This is also good for selling business because of the ingredients are very affordable. This is addictive to eat specially to the kids because of sugary coated, little bit chewy, and the taste of cassava and sugar.
1 Kg. Cassava
2 Tbsp. White Sugar
1/2 Tsp. Salt
2 Cups Cooking Oil
1/2 Cup Brown Sugar (for coating).
Procedure:
Step 1: Grate the cassava.
Step 2: Squeeze out the liquid of grated cassava. You can use clean cloth or strainer. Make sure to clean your hands before handling.
Step 3: Combine white sugar and salt to squeezed grated cassava and mix very well until all ingredients are incorporated.
Step 4: Pick 1 to 2 tablespoonful of cassava and roll in palm of hands.
Step 5: Once the cassava ball shaping is finished, prepare to heat up the cooking oil.Turn on the stove to medium heat.Pour enough cooking oil to submerged the cassava balls.The cassava balls will float when it is done. You can pour two cups of cooking oil if you want to save using more oil. But stir it continuously until three to four minutes as I did in this video.
Step 6: Gently drop the cassava balls. Do not overcrowd, cook in batches as needed.
Step 7: Once all balls are done, gently drop it all then add 1/2 cup of brown sugar. Turn the the stove to high flame until the sugar is melted and turn the stove to medium heat once it is melted. Stir it until get the consistency of sugar coating. Then remove them from the pan and serve while hot. It is better if you have skewer.
