Pancake

Pancake is one of the family's favorites. It is very easy to prepare and only require simple ingredients that you may already have in your kitchen. It is perfect for your merienda with hot coffee. Pancake is great if you will serve with apple syrup but typically, we are applying butter and white sugar on top. In this recipe, I used dusted sugar on top with butter. I even used apple syrup and chocolate syrup Since I have all of these in my kitchen.

Pinais Na Dilis

Pinais Na Dilis is one of the oldest delicacy that very easy to cook, with affordable ingredients but tasty and delicious. I used sinigang mix powder in this recipe because fresh sampaloc is not available nor kamias here in my place. But I was surprised to the outcome of instant pampaasim, it is really tasty. It is indeed tastier if you will squeeze calamansi  on top of it then add some chilies. Well, once you added chilies, you may say perfect! because this is the great partner of pinais for hot steamed rice.

Suman Malagkit sa Matamis Na Bao

Suman Malagkit is one of the favorites or you can say one of the best snacks to eat and usually eating during breakfast with coffee. You can simply dip it in white sugar then drink a cup of coffee and guess what, it would complete your day because you will instantly remember what you were eating during old days. Because suman malagkit is always there in every holidays specially Christmas and new year. Suman sa malagkit is merely perfect if you have Matamis Na Bao sauce. You can buy coconut caramel in grocery if you do not have time to make matamis na bao. But of course making your own caramel sauce is more natural when it comes with its taste. Some way of making matamis na bao is using brown sugar instead of Sangkaka or panocha, due to unavailability of it. For me, suman sa malagkit is my favorite because of the authenticity and taste. I used to cook with my mom during my childhood and I can say because of suman sa malagkit, I always remember the memories with my family gathering during important occasions specially Christmas.

Ingredients for Suman Malagkit:

3 cups          Glutinous Rice
3 cups          Coconut Milk
1 1/2 tsp       Salt
1/4 cup         Sugar
Banana Leaves

Ingredients for Matamis Na Bao:

2 cups         Coconut Milk
1 cup           Sangkaka or Brown Sugar
1/4 tsp.        Salt

Cooking Procedure:

Step 1
In a bowl, soak glutinous rice for 3 hours. Then prepare a big bowl to squeeze the coconut milk.
Pour 5 cups shredded coconut  and 3 cups of warm water. It can produce 5 cups of coconut
milk which is enough to make Suman Malagkit and for Matamis Na Bao.

Step 2
In a wok pan, pour 3 cups of coconut milk then add 1/4 tsp. of salt over low heat. Stir it to dissolve salt and let it boil. Once it is boiled, pour 3 cups of soaked glutinous rice and constantly stir until liquid is completely absorbed. It will take 10 to 12 minutes of stirring. Remove the pan and set aside for 10 to 15 minutes once it is done.

Step 3
Meanwhile, prepare banana leaves for wrapping by passing it over the flames. You should do this process to strengthen the leaves so that it would not tear easily. Cut it by 10 by 6 inches or 10 by 10 inches depends the size of your Suman. Prepare as well for tie by cutting the banana ribs or kitchen twine or simply string of rice sack.

Step 4
Scope 2 tablespoonful of rice malagkit and place it on banana leaf horizontally. Place your two thumbs  to lock it onto the edge of covered malagkit then roll it tightly, then fold both ends gently. Tie the Suman by facing both end of paired suman. You can watch the video down below for proper demonstration.

Step 5
In a pot, pour enough water and place the suman inside steamer then cook it for 1 hour over medium heat. You can cook it as well through boiling over low medium heat for 45 minutes. Once it is done, set it aside for cooling it down and cover it to steam it more.

Coffee Jelly

Coffee Jelly is a dessert flavored coffee, sugar and milk. Once you started to chew the jelly with the essence of coffee, you will realize the beauty of coffee specially if you are fond of drinking it. The taste became perfect due to combination of milk, cheese, and sugar, and of course its ice cold really gives a big difference on every scope of it. It is most common in Japan served in restaurant and cafes. Often cut into cubes and served in a variety of dessert and beverages. But in the Philippines, we made it a little more tasty by adding condensed milk, cheese, and cream. Easy to make yet but refreshing to eat.

Porksteak is one of the famous dish that we learned from Spanish. Usually it is made from beef  but we made our version of pork steak originated from Southern Tagalog.  Soy sauce, calamansi, and onion  are the main ingredients that suits to our taste. You can add brown sugar as well, but in this video, I have added dates for my own version.

Karioka Cassva

Karioka is one of the favorite snacks of Filipinos. It is usually made of glutinous flour or cassava. In this video, I made Karioka using cassava. You would notice here the ingredients are very basic and very easy to prepare. That is why this is perfect for urgent snack preparation for you unexpected visitors. This is also good for selling business because of the ingredients are very affordable. This is addictive to eat specially to the kids because of sugary coated, little bit chewy, and the taste of cassava and sugar.
